Origin and Harvest
Single-origin Ayvalik olives from our family grove in Manisa, Türkiye.
Current Harvest: 10/05/2024.
Hand harvested early in the season while the fruit is still firm and green.
Pressed the same day, below 80°F, to protect flavor and nutrients.

Quality
Polyphenols around 414 mg/kg, which is considered very high.
Acidity below 0.3%, well under the 0.8% limit for extra virgin.
No blends.

How to use it
Tomatoes, eggs, bread, pizza dough, pasta, dipping.
Great when you want richness without sharp bite.
